Crockpot Chicken Tortilla Soup

With cooler weather on the horizon I have been pulling out all of my soup recipes, and this by far is my favorite!! It is so simple and full of flavor. Even my picky eater babe eats this!



I originally found a recipe like this on Pinterest. But it wasn't my favorite and ended up changing the recipe a lot and made it into my own. It turned our perfect!
Here's what you'll need:




1lb Chicken Breast
5 Cups chicken stock or broth
15oz can sweet whole corn kernels, drained
2- 15oz black beans, drained
15oz can diced tomatoes, drained
1 onion, chopped
1 Jalapeno, minced
1 green pepper, chopped
2 cloves garlic, minced
1/4 tsp chili powder
Seasoned Tortilla Strips
Shredded cheese of your choice


Directions:
Add all ingredients to crockpot . Cook on high for 4 hours or low for 8 hours
Prior to serving remove chicken and shred. Mine shredded real easy with just two forks.
Add chicken back to mixture and stir.
Your done! Top with shredded cheese, seasoned tortilla strips and a spoonfull of sour cream! I like to serve mine with french bread and some warm Apple Cider. Perfect for those cool Fall Evenings!

 



 

Petting Zoo

The hubby had Monday off and since the weather has been a little cooler we decided to head to the Petting Zoo. {And when I say cooler weather, I mean its 85 degrees instead of 100} We have taken Ryder to the regular Zoo twice this year and he enjoyed this so much more! I think it's because it wasn't as crowded and he could pet and feed the animals. 









 

He tried to mimic all the animals sounds and waved bye bye to each and everyone of them. He had a blast!

The Petting Zoo is right next to a closed Pumpkin Patch and I'm patiently waiting for a Pumpkin Pickin' Day!

Our Week in Pictures

It is Finally Friday!! This week has really dragged on, probably because it has been really cold and rainy most of the week.

The only day it didn't rain was Monday and we headed to the Outlets to do some shopping. And when I say shopping I mean Ryder ate some flowers, pushed the stroller and wore my sunglasses like a boss while we ate lunch. 





Tuesday and Wednesday were mostly rainy, but we were able to take an early morning walk in between storms. Ryder of course had to bring Cash.


Two days stuck in the house and cabin fever sets in. We all were going a little crazy!


After the Third day of rain and lots of time spent looking out the window we finally decide to just bundle up and head outside. It was 55 degrees Thursday!!

This morning I cut Ryder's hair {which is traumatizing} and we played outside before the storms rolled in. 


 
Ryder only wants to wear one shoe today, he refuses to wear the other one.

 

We ran some errands and now It's pouring rain, so we are going to listen to the thunder and patiently wait for daddy to get home so we can go out to dinner. 
And I think it's a Hocus Pocus kind of night!


I hope the weather is better tomorrow, I want to snatch up some pumpkins at the Farmers Market and do some more Fall decorating! Hope you all have a great weekend. Happy Friday 13th!!
